Teriyaki Sauce
Instructions
- Cut spam (1 can) into 6 slices and nori (2 sheets) into 6 strips (3 strips per sheet). 
- Crack eggs (2) into a small bowl, season with salt and beat til mixed well. 
- In a small bowl, mix together soy sauce (2 Tbsp), brown sugar (2 Tbsp), and mirin (2 Tbsp) to make a teriyaki sauce. 
- In a pan over a medium heat, cook the spam til golden brown on both sides. No oil is needed since the spam will render out it’s own fat (similar to bacon). 
- Add in the teriyaki sauce and coat both sides of spam. Cook til sauce is thickened and caramelized. 
- In a small pan over medium–low heat, pan fry beaten egg mixture til it’s cooked through. Keep it flat, in a thin sheet. Remove it from the pan and set aside on a plate. 
- Line the empty spam can with saran wrap (with some sticking out so you can easily pull it out). 
- Layer rice, furikake, egg, and spam inside the can. Be sure to compress the rice tightly with everything else to prevent the musubi from falling apart. 
- Lift the layers out of the can using the saran wrap sticking out and unwrap. 
- Wrap with nori strip (shiny side out, rough side under) and use rice grains to seal the edge of the nori strip together.
